Vegan Banana Spice Cake

1.Preheat your oven to 350°F (175°C). Grease and flour a 9-inch (23cm) round cake pan or line it with parchment paper.

2.In a large mixing bowl, sift together the flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg. Whisk to combine evenly.

3.In a separate bowl, mash the ripe bananas thoroughly until smooth.

4.Add the vegetable oil, almond milk, vanilla extract, and vinegar to the mashed bananas. Mix well until fully combined.

5.Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon just until the batter is combined. Do not overmix; a few lumps are okay.

6.If using, fold in the chopped nuts gently.

7.Pour the batter into the prepared cake pan and smooth the top with a spatula.

8.Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

9.Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.

10.Serve plain or with a dusting of powdered sugar, vegan cream cheese frosting, or fresh fruit as desired.
