Russian Cheese Bread (Syrniki)

1.In a large mixing bowl, combine the farmer's cheese, eggs, and finely minced garlic. Mix thoroughly until smooth and well incorporated.

2.Add the grated hard cheese, baking powder, salt, black pepper, and fresh dill (if using) to the cheese mixture. Stir to combine evenly.

3.Gradually add the flour to the mixture, stirring gently until a soft, slightly sticky dough forms. Avoid overmixing to keep the bread tender.

4.Lightly flour your working surface and your hands. Divide the dough into 8 equal portions and shape each into a small, thick patty about 1.5 cm (0.6 inches) thick and 7-8 cm (3 inches) in diameter.

5.Heat the butter or vegetable oil in a large non-stick skillet over medium heat until shimmering but not smoking.

6.Carefully place the patties in the skillet, leaving space between each. Fry for about 3-4 minutes on each side, or until they develop a golden-brown crust and are cooked through.

7.Transfer the cooked cheese bread to a paper towel-lined plate to drain any excess oil.

8.Serve warm as a savory breakfast or snack, optionally accompanied by sour cream or fresh herbs.
