Mr Krupp’s Tuna Casserole

1.Preheat oven to 375°F (190°C). Grease a 9x13-inch (23x33cm) baking dish with butter or nonstick spray.

2.Cook egg noodles in a large pot of salted boiling water until just al dente, about 6 minutes. Drain and set aside.

3.In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for 3 minutes until softened. Stir in garlic and cook for 1 minute more. Add sliced jalapeños (reserve enough slices to spell 'Krupp' on top) and cook for another 2 minutes.

4.In a large mixing bowl, combine cooked noodles, sautéed onion/garlic/jalapeño mixture, drained tuna, frozen peas, 3/4 cup cheddar cheese, sour cream, cream of mushroom soup, milk, smoked paprika, cayenne (if using), salt, and black pepper. Mix until evenly combined.

5.Transfer mixture to the prepared baking dish and spread evenly. Sprinkle remaining 1/4 cup cheddar cheese over the top.

6.In a small bowl, mix melted butter with panko breadcrumbs. Sprinkle evenly over the casserole.

7.Arrange reserved jalapeño slices on top of the casserole to spell out 'Krupp.'

8.Bake uncovered for 25-30 minutes, or until the top is golden brown and bubbly. Let cool for 5 minutes before serving.
