Spicy Sriracha-Lime Fish Jerky

1.Prepare the Fish: Using a very sharp knife, slice the fish fillets against the grain into strips approximately 1/4 inch thick and 4 to 6 inches long. Consistency is key for even drying.

2.Mix the Marinade: In a medium bowl, whisk together the soy sauce, Sriracha, lime juice, Worcestershire sauce, smoked paprika, garlic powder, black pepper, cayenne pepper (if using), and brown sugar until the sugar is dissolved.

3.Marinate: Add the fish strips to the marinade, ensuring every piece is fully coated. Cover the bowl and refrigerate for a minimum of 4 hours, or preferably overnight, to allow the flavors to penetrate.

4.Preheat Oven/Dehydrator: If using an oven, preheat to the lowest possible temperature, ideally between 65°C and 80°C (150°F to 175°F). If using a food dehydrator, set it to 65°C (150°F).

5.Arrange the Fish: Line baking sheets with parchment paper or silicone mats (or use dehydrator trays). Arrange the marinated fish strips in a single layer, ensuring they do not overlap.

6.Dry the Jerky: Place the trays in the preheated oven or dehydrator. If using an oven, prop the door slightly ajar with a wooden spoon to allow moisture to escape.

7.Monitor and Flip: Dry for 3 to 6 hours. Check the jerky every 60 to 90 minutes, flipping the pieces over to ensure even drying. The total time will vary significantly based on humidity, fish thickness, and appliance.

8.Test for Doneness: The jerky is ready when it is dry to the touch, slightly firm, and bends without easily snapping in half. It should not feel moist or squishy.

9.Cool and Store: Remove the jerky from the heat source and allow it to cool completely on a wire rack. Store the cooled, spicy fish jerky in an airtight container at room temperature for up to two weeks, or refrigerate for longer storage.
