Mint Cookies

Prepare the Cookie Dough In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

2.In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg, vanilla extract, peppermint extract, and green food coloring (if using). Mix until well combined.

3.Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.

4.Cover the dough with plastic wrap and refrigerate for at least 1 hour.

Preheat the Oven Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.

Shape the Cookies Using a cookie scoop or tablespoon, drop rounded dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a glass or the palm of your hand.

Bake the Cookies Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Prepare the Mint Frosting In a medium bowl, cream together the butter, powdered sugar, milk, peppermint extract, and green food coloring (if using) until smooth and creamy.

Assemble the Cookies Once the cookies are completely cool, spread a spoonful of mint frosting onto the bottom of one cookie and sandwich it with another cookie. Repeat with the remaining cookies.

Garnish the Cookies Sprinkle crushed peppermint candy on top of the frosting for garnish, if desired.
