Fig and Dragon Fruit Cupcakes

Preparation Preheat the oven to 350°F (175°C).

2.In a mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt.

3.Add the softened butter and mix until the mixture resembles coarse crumbs.

4.In another bowl, whisk together the eggs, milk, and vanilla extract.

5.Pour the wet ingredients into the dry ingredients and mix until just combined.

6.Fold in the diced figs and dragon fruit.

Baking Line a muffin pan with cupcake liners and fill each liner 3/4 full with the batter.

8.Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

Frosting Remove from the oven and let cool completely before frosting.

10.In a large mixing bowl, beat the softened butter until creamy.

11.Gradually add the powdered sugar, heavy cream, and vanilla extract. Beat until smooth and fluffy.

12.Optional: Add a few drops of pink food coloring and mix until the desired color is achieved.

13.Transfer the buttercream frosting to a piping bag fitted with a star tip.

14.Pipe the frosting onto the cooled cupcakes.

Garnish Garnish with fresh fig slices, dragon fruit slices, mint leaves, and edible flowers (if desired).
