Courgette and Feta Stuffed Peppers

Preparation Preheat the oven to 180°C (350°F).

Cooking the Filling Heat olive oil in a large pan over medium heat. Add the red onion and garlic, sauté until softened.

Continuing the Filling Add the diced courgettes and cook until they start to soften. Season with salt and pepper.

Mixing the Filling Transfer the courgette mixture to a large bowl. Add the crumbled feta, cherry tomatoes, and parsley. Mix well to combine. Adjust seasoning if needed.

Preparing the Peppers Drizzle the halved bell peppers with olive oil and season with salt and pepper. Stuff the peppers with the courgette and feta mixture. Top with extra feta cheese.

Baking the Peppers Place the stuffed peppers on a baking tray and bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the filling is heated through.

Preparing the Side Salad While the peppers are baking, prepare the side salad by mixing the salad leaves, cherry tomatoes, cucumber, and red onion in a bowl. Drizzle with balsamic dressing, olive oil, and season with salt and pepper.
