New Year's Fish Celebration

1.Preheat the oven to 375°F (190°C).

2.Rinse the fish under cold water and pat dry with paper towels.

3.Season the inside and outside of the fish with salt and black pepper.

4.Thinly slice one lemon and stuff the fish cavity with the lemon slices and a few sprigs of dill.

5.In a small bowl, mix together the olive oil, honey, Dijon mustard, white wine, garlic powder, onion powder, paprika, cayenne pepper, and a squeeze of lemon juice from the remaining lemon.

6.Place the fish on a baking dish and brush the marinade mixture all over the fish.

7.Top the fish with fresh dill sprigs and lemon slices.

8.Cover the dish with foil and bake in the preheated oven for about 20-25 minutes or until the fish is cooked through.

9.Once cooked, uncover the fish and broil for an additional 2-3 minutes to lightly brown the top.

10.Garnish with fresh parsley and serve hot. Enjoy your New Year's Fish Celebration!
