Costa Rican Chicken Dinner

1.In a large skillet, heat some oil over medium heat.

2.Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove and set aside.

3.In the same skillet, add the onions and bell peppers. Cook until softened, about 5 minutes.

4.Add the minced garlic, cumin, paprika, and oregano. Cook for another 2 minutes until fragrant.

5.Pour in the chicken broth and bring to a simmer.

6.Return the chicken to the skillet. Cover and simmer for 15-20 minutes until the chicken is cooked through.

7.Serve the Costa Rican chicken over a bed of cooked white rice, garnished with chopped cilantro and lime wedges.
