Christmas Dorayaki Cakes

1.In a mixing bowl, whisk together the eggs and sugar until light and fluffy.

2.Add the milk and vanilla extract to the egg mixture and mix well.

3.Sift in the flour and baking powder, and gently fold until just combined.

4.Heat a non-stick pan over medium heat and lightly grease with oil.

5.Pour a small amount of batter onto the pan to form small pancakes, cook until bubbles form on the surface, then flip and cook the other side until golden brown.

6.Repeat the process with the remaining batter to make several small pancakes.

7.Once the pancakes are cool, spread a layer of red bean paste on half of them and top with whipped cream.

8.Sandwich the pancakes together to form dorayaki cakes.

9.Dust the cakes with powdered sugar and decorate with Christmas-themed sprinkles before serving.
