Sweet and Spicy Asian Chicken with Zucchini

1.In a bowl, mix soy sauce, honey, rice vinegar, garlic, ginger, and red pepper flakes to make the marinade.

2.Add sliced chicken to the marinade, cover, and refrigerate for at least 30 minutes.

3.In a separate bowl, mix cornstarch and water to make a slurry for thickening the sauce later.

4.Heat oil in a large skillet over medium-high heat.

5.Add marinated chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.

6.Remove chicken from the skillet and set aside.

7.In the same skillet, add sliced zucchinis and stir-fry for 3-4 minutes until slightly tender.
