Kaju Katli - A Rich Cashew Fudge

1.Soak the cashew nuts in water for about 2 hours, then drain and dry them thoroughly.

2.In a blender, grind the soaked cashew nuts into a fine powder. Be careful not to over-blend, as it can turn into cashew butter.

3.In a non-stick pan, add the sugar and milk. Stir over medium heat until the sugar dissolves completely.

4.Once the sugar is dissolved, add the cashew powder and mix well to combine.

5.Continue to cook the mixture on low heat, stirring continuously to prevent it from sticking to the pan.

6.After about 10-15 minutes, the mixture will start to thicken and leave the sides of the pan. At this point, add the ghee and cardamom powder, mixing well.

7.Cook for another 5 minutes until the mixture forms a dough-like consistency.

8.Remove the mixture from the heat and let it cool slightly until it is manageable to handle.

9.Grease a flat surface or a plate with ghee, and transfer the mixture onto it.

10.Using a rolling pin, roll the mixture into a thin layer, about 1/4 inch thick.

11.Allow it to cool completely, then cut into diamond or square shapes.
