Sweet and Savory Chocolate Apple Cider Gumbo

1.In a large pot, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté until the vegetables are softened, about 5 minutes.

2.Add the minced garlic and sliced andouille sausage to the pot. Cook for an additional 5 minutes until the sausage is browned.

3.Stir in the Cajun seasoning and cook for 1 minute to release the flavors.

4.Add the diced tomatoes (with their juice), apple cider, chicken broth, Worcestershire sauce, and bay leaf. Bring the mixture to a boil.

5.Reduce the heat to low and let the gumbo simmer for 20 minutes, allowing the flavors to meld together.

6.After 20 minutes, add the sliced okra and chopped dark chocolate to the pot. Stir well to combine and let it simmer for another 10 minutes until the okra is tender and the chocolate is melted.

7.Season with salt and pepper to taste. Remove the bay leaf before serving.

8.Ladle the gumbo into bowls and garnish with chopped green onions.
