Spicy Tomato and Potato Curry

1.Heat the peanut oil in a large pot over medium heat.

2.Add the finely chopped onion and sauté until it becomes translucent, about 5 minutes.

3.Stir in the chili paste and cook for another 2 minutes until fragrant.

4.Add the chopped tomatoes to the pot and cook until they break down and become saucy, about 10 minutes.

5.Sprinkle in the cinnamon, chili powder, turmeric, salt, and pepper. Stir well to combine all the spices with the tomato mixture.

6.Add the diced potatoes to the pot and mix them into the sauce.

7.Pour in the water, bring the mixture to a boil, then reduce the heat to low and cover the pot.

8.Let the curry simmer for about 20-25 minutes, or until the potatoes are tender and cooked through, stirring occasionally.

9.Taste and adjust seasoning if necessary, adding more salt or pepper as desired.

10.Once cooked, remove from heat and let it sit for a few minutes before serving.

11.Garnish with fresh cilantro before serving.
