Caramelized Onion and Tomato Potato Skillet

1.Heat 2 tablespoons of olive oil in a large skillet over medium heat.

2.Add the sliced onions to the skillet and cook, stirring occasionally, for about 10-15 minutes until they are soft and caramelized. Reduce the heat if they start to brown too quickly.

3.While the onions are caramelizing, in a separate pot, boil the diced potatoes in salted water for about 10 minutes until just tender. Drain and set aside.

4.Once the onions are caramelized, push them to one side of the skillet and add the remaining tablespoon of olive oil to the empty side.

5.Add the boiled potatoes to the skillet and sprinkle with garlic powder, dried thyme, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the potatoes are crispy and golden brown.

6.Add the halved cherry tomatoes to the skillet and cook for an additional 3-5 minutes until the tomatoes are softened and heated through.

7.Mix everything together in the skillet, adjust seasoning if necessary, and cook for another minute to combine the flavors.

8.Remove from heat and garnish with fresh chopped parsley before serving.
