Christmas Crunch Tuna Croquettes

1.In a large mixing bowl, combine the drained tuna, mashed potatoes, breadcrumbs, Parmesan cheese, chopped onion, bell pepper, parsley, garlic powder, onion powder, paprika, black pepper, and salt. Mix until well combined.

2.Add the beaten eggs to the mixture and stir until everything is evenly incorporated.

3.Using your hands, form the mixture into small patties or croquettes, about 2 inches in diameter.

4.Place the flour in a shallow dish. Dredge each croquette in the flour, shaking off any excess.

5.In a large skillet, heat about 1 inch of vegetable oil over medium heat until hot.

6.Carefully add the croquettes to the hot oil, cooking in batches if necessary to avoid overcrowding the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

7.Once cooked, transfer the croquettes to a paper towel-lined plate to drain excess oil.

8.Serve warm, garnished with additional parsley if desired.
