Cinnamon Sugar Crust Cookies

1.Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2.In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3.In a large mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy, about 3-4 minutes.

4.Add the egg and vanilla extract to the butter mixture, and mix until well combined.

5.Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

6.In a small bowl, combine the ground cinnamon and 1/4 cup of granulated sugar for rolling the cookies.

7.Using a cookie scoop or tablespoon, scoop out portions of dough and roll them into balls.

8.Roll each ball in the cinnamon sugar mixture until fully coated, then place them on the prepared baking sheet, spacing them about 2 inches apart.

9.Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.

10.Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
