Tropical Rum-Infused Chocolate Tarte

1.In a mixing bowl, combine the flour, cocoa powder, and powdered sugar. Add the cold cubed butter and mix until the mixture resembles coarse crumbs.

2.Add the egg yolk and cold water to the mixture, stirring until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

3.Preheat your oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.

4.Prick the bottom of the tart crust with a fork and place a piece of parchment paper on top, filled with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment and bake for an additional 10 minutes until set. Allow to cool completely.

5.In a small saucepan, combine the shredded coconut and dark rum. Heat over medium-low heat until the rum is absorbed and the coconut is fragrant, about 5 minutes. Remove from heat and let cool slightly.

6.In another saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped dark chocolate, stirring until smooth and melted.

7.Stir in the granulated sugar, sea salt, and vanilla extract into the chocolate mixture until fully combined.

8.Spread the rum-soaked coconut evenly over the cooled tart crust. Pour the chocolate mixture over the coconut, smoothing it out with a spatula.

9.Refrigerate the tart for at least 2 hours or until set. Once set, drizzle the caramel sauce over the top before serving.

10.Garnish with fresh mint leaves for a tropical touch and slice to serve.
