Rainbow Layer Birthday Cake with Cream Cheese Frosting

1.Preheat your oven to 350°F (175°C) and grease six 8-inch round cake pans. Line the bottoms with parchment paper for easy removal.

2.In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3.In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.

4.Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

5.Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined; do not overmix.

6.Divide the batter evenly into six bowls. Use food coloring to dye each bowl a different color (red, orange, yellow, green, blue, purple).

7.Pour each colored batter into the prepared cake pans, smoothing the tops. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

8.While the cakes are cooling, prepare the cream cheese frosting. In a mixing bowl, beat together the softened cream cheese and butter until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well combined. If the frosting is too thick, add milk one tablespoon at a time until desired consistency is reached.

9.Once the cakes are completely cool, level the tops with a serrated knife if necessary. Place the purple layer on a serving plate and spread a layer of cream cheese frosting on top. Repeat with the blue, green, yellow, orange, and red layers, stacking them on top of each other with frosting in between each layer.

10.Use the remaining cream cheese frosting to frost the top and sides of the entire cake. Smooth it out with a spatula or create swirls for a decorative effect.

11.For an extra festive touch, decorate the top with sprinkles or edible glitter. Slice and serve to reveal the vibrant rainbow layers.
