Caffeinated Sugar Cookies

1.Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2.In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

3.In a large bowl, cream the softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

4.Beat in the egg and vanilla extract until fully incorporated.

5.Add the cooled brewed coffee and mix until combined.

6.Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined. Avoid overmixing to keep the cookies soft.

7.Fold in the crushed Dark Fantasy biscuits gently, distributing them evenly throughout the dough.

8.Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in additional granulated sugar to coat lightly.

9.Place the dough balls on the prepared baking sheet about 2 inches apart to allow spreading.

10.Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers remain soft. The cookies will firm up as they cool.

11.Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

12.Serve the cookies slightly warm or at room temperature with a cup of coffee or tea for a perfect sweet snack.
