Keto Asian Coconut Seafood Curry with Vegetables

1.Heat coconut oil in a large skillet or pot over medium heat.

2.Add sliced onion and sauté until softened, about 5 minutes.

3.Add minced garlic and grated ginger, and cook for another minute until fragrant.

4.Stir in the red curry paste and cook for 1-2 minutes, stirring constantly, until fragrant.

5.Add the sliced bell peppers, broccoli florets, and baby corn to the skillet. Stir to coat with the curry paste.

6.Pour in the coconut milk and water (or broth). Bring to a simmer.

7.Add the fish sauce and turmeric powder. Season with salt, pepper, and cayenne pepper (if using).

8.Gently add the mixed seafood to the simmering curry. Cook for 5-7 minutes, or until the seafood is cooked through and opaque.

9.Taste and adjust seasoning as needed.

10.Serve the curry hot over cauliflower rice.

11.Garnish with fresh chopped cilantro and lime wedges.
