Vibrant Vegetable Stir-Fry Delight

1.In a small bowl, whisk together all ingredients for the Savory Sauce (soy sauce, oyster sauce, rice vinegar, sugar, cornstarch, and white pepper). Set aside.

2.Heat the sesame oil in a large wok or a large, heavy-bottomed skillet over medium-high heat until shimmering.

3.Add the minced garlic and grated ginger to the hot oil and stir-fry quickly for about 30 seconds until fragrant, being careful not to burn the garlic.

4.Add the carrots and broccoli florets to the wok. Stir-fry for 3-4 minutes until they start to become tender-crisp.

5.Add the sliced red and green bell peppers, snow peas, mushrooms, and onion. Continue to stir-fry for another 3 minutes, tossing constantly to ensure even cooking.

6.Pour the 1/4 cup of water or vegetable broth into the wok to create steam and prevent sticking.

7.Give the prepared sauce a quick re-whisk (as the cornstarch may have settled) and pour it evenly over the vegetables.

8.Stir continuously for 1 to 2 minutes. The sauce will rapidly thicken and coat all the vegetables, achieving a glossy finish.

9.Remove the wok from the heat immediately. Taste and adjust seasoning if necessary (add a pinch more salt or a dash more vinegar if desired).

10.Serve the vegetable stir-fry hot over steamed rice or noodles. Garnish generously with toasted sesame seeds and thinly sliced green onions.
