Spiced Tater Tot Casserole with Sharp Cheddar and Dill

1.Preheat your oven to 200°C (400°F). Lightly grease a 9x13 inch baking dish.

2.Prepare the filling: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until softened and translucent, about 5 minutes.

3.Add the ground soyrizo to the skillet. Cook, breaking it up with a spoon, until heated through and slightly browned, about 7-10 minutes.

4.Stir in the spicy tomato sauce, cumin, chili powder, smoked paprika, cayenne pepper, onion powder, salt, and black pepper. Mix well to combine and allow the mixture to simmer gently for 5 minutes, allowing the flavors to meld.

5.Spread the seasoned soyrizo mixture evenly into the bottom of the prepared baking dish.

6.Arrange the frozen tater tots in a single, even layer over the top of the meat mixture. Do not overlap them significantly.

7.Bake for 25 minutes, or until the tater tots are golden brown and crispy.

8.Remove the casserole from the oven. Sprinkle the shredded sharp cheddar cheese evenly over the hot tater tots.

9.Return the casserole to the oven and bake for another 5-7 minutes, or until the cheese is fully melted and bubbly.

10.Remove from the oven. Immediately sprinkle the top evenly with the fresh chopped dill and the dried dill weed.

11.Let the casserole cool for 5-10 minutes before slicing and serving.
