Riz au Lait

Cooking the Rice Rinse the rice under cold water until the water runs clear. In a large saucepan, combine the rice, milk, sugar, vanilla extract, and salt. Bring the mixture to a gentle boil over medium heat, then reduce the heat to low and simmer, stirring occasionally, for 30-40 minutes or until the rice is tender and the mixture has thickened to a creamy consistency.

Serving the Riz au Lait Divide the riz au lait among serving dishes or bowls. Sprinkle a dash of ground cinnamon on top and garnish with fresh berries or fruit compote if desired. Serve warm or chilled, as preferred.
