Blackcurrant Beer Trout with Apple

Marinate the Trout In a shallow dish, combine blackcurrant juice, beer, minced garlic, chopped thyme, salt, and pepper. Place trout fillets skin-side up in the marinade. Cover and refrigerate for at least 30 minutes.

Grill the Trout Preheat the grill to medium-high heat. Remove the trout fillets from the marinade and place them skin-side down on the grill. Cook for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork. Remove from grill and set aside.

Prepare the Sauce In a small saucepan, combine blackcurrant juice and beer. Bring to a simmer over medium heat. If desired, mix cornstarch and cold water in a separate bowl, then add to the simmering liquid to thicken the sauce. Simmer for a few minutes until thickened. Remove from heat.

Make the Apple Salad In a large bowl, combine sliced apples and lemon juice. Add mixed greens, chopped walnuts, extra-virgin olive oil, and apple cider vinegar. Season with salt and pepper. Toss until well coated.
