Stuffed Bell Peppers

1.Preheat the oven to 180°C (350°F).

2.In a large skillet, heat some olive oil over medium heat.

3.Add the chopped onion and minced garlic to the skillet, and cook until softened and lightly browned.

4.Add the ground beef to the skillet and cook until browned. Season with paprika, cumin, salt, and pepper.

5.Remove the skillet from the heat and let the stuffing mixture cool slightly.

6.While the stuffing cools, prepare the winter salad. In a large bowl, combine the winter salad mix, sliced red onion, and sliced apple.

7.In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Drizzle the dressing over the salad and toss to combine.

8.Cut the tops off the bell peppers and remove the seeds and membranes.

9.Fill each bell pepper with the stuffing mixture, pressing it down lightly.

10.Drizzle the stuffed bell peppers with olive oil and place them in a baking dish.

11.Bake in the preheated oven for 25-30 minutes, or until the bell peppers are soft and slightly charred.

12.Serve the stuffed bell peppers hot with the winter salad on the side.
