Baked Duck

Preparation Preheat the oven to 400°F (200°C).

Seasoning Pat dry the duck with paper towels and season generously with salt and pepper, both inside and outside.

Marinade In a small bowl, mix together the minced garlic, soy sauce, honey, olive oil, and balsamic vinegar to make the marinade.

Marinade Rub the marinade all over the duck, making sure to get it into the cavity.

Stuffing Place the halved oranges and sprigs of fresh rosemary inside the duck's cavity as stuffing.

Roasting In a roasting pan, scatter the chopped onion, celery, carrots, minced garlic, thyme, rosemary, and dried cranberries to create a bed for the duck.

Roasting Place the duck on top of the bed of vegetables and roast in the preheated oven for about 2 hours, or until the internal temperature reaches 165°F (74°C).

Resting Remove the duck from the oven and let it rest for 10-15 minutes before carving.

Serving Serve the baked duck with the roasted vegetables and enjoy!
