Christmas Simfaina

1.In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 3-4 minutes.

2.Add the tomatoes, bell pepper, potatoes, eggplant, zucchini, green beans, and chickpeas to the pot. Stir well to combine all the vegetables.

3.Season with cinnamon, nutmeg, allspice, smoked paprika, cayenne pepper, and ground cloves. Mix everything thoroughly to coat the vegetables with the spices.

4.Pour enough water to cover the vegetables and bring the stew to a simmer. Cook for about 20 minutes, stirring occasionally, until the vegetables are tender but not mushy.

5.Add the peas, raisins, and almonds to the pot. Stir gently to incorporate the additional ingredients and continue to simmer for another 5 minutes.

6.Adjust seasoning if needed. Sprinkle fresh parsley over the stew before serving.

7.Serve the Christmas Simfaina hot, garnished with extra almonds and parsley if desired.
