Apricot Éclair Delight

1.Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2.In a medium saucepan, combine the water, butter, and salt. Bring to a boil over medium heat, stirring until the butter is melted.

3.Once boiling, remove from heat and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

4.Let the dough cool for about 5 minutes, then add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

5.Transfer the dough to a piping bag fitted with a large round tip. Pipe 4-inch long strips onto the prepared baking sheet, leaving space between each éclair.

6.Bake in the preheated oven for 25-30 minutes, or until golden brown and puffed. Do not open the oven door during baking.

7.Once baked, remove from the oven and let cool completely on a wire rack.

8.While the éclairs cool, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.

9.Once the éclairs are cool, use a sharp knife to make a small slit in the side of each éclair. Fill each éclair with apricot jam using a piping bag or a small spoon.

10.Next, fill the éclairs with the whipped cream, using the same method as before.

11.For the chocolate glaze, melt the dark chocolate with the milk in a microwave or over a double boiler until smooth. Stir well to combine.

12.Dip the top of each filled éclair into the chocolate glaze, allowing any excess to drip off. Place back on the wire rack to set the glaze.

13.Serve the apricot éclairs chilled or at room temperature, and enjoy your delightful treat!
