Cherry Delight Pie with a Flaky Crust

1.In a large mixing bowl, combine the flour and salt. Add the chilled, cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

2.Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

3.Preheat your oven to 375°F (190°C).

4.In another bowl, combine the pitted cherries, granulated sugar, cornstarch, and vanilla extract. Stir gently to coat the cherries evenly and set aside to let the juices mix.

5.Roll out the chilled dough on a floured surface to fit your pie dish. Place the rolled dough into the pie dish, trimming any excess around the edges.

6.Pour the cherry mixture into the pie crust, spreading it evenly.

7.Roll out the remaining dough to create a top crust. You can either place it whole over the filling or cut it into strips to create a lattice top. Seal the edges by crimping with your fingers or a fork.

8.Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.

9.Remove from the oven and let it cool for at least 15 minutes before serving.
