Coconut-Infused Sushi Rice Delight

1.Rinse the sushi rice under cold water in a fine mesh strainer until the water runs clear, about 2-3 minutes. This removes excess starch and helps achieve a fluffy texture.

2.In a medium saucepan, combine the rinsed sushi rice and water. Let it soak for 30 minutes to an hour for optimal texture.

3.After soaking, add the coconut oil and salt to the saucepan with the rice and water. Stir gently to combine.

4.Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer for 18-20 minutes without lifting the lid.

5.After the cooking time, remove the saucepan from heat and let it sit, covered, for an additional 10 minutes to allow the rice to steam and become fluffy.

6.In a small bowl, mix the rice vinegar and sugar until the sugar is dissolved. This will be your sushi vinegar.

7.Once the rice has rested, transfer it to a large bowl. Drizzle the sushi vinegar over the rice and gently fold it in with a wooden spatula or rice paddle, being careful not to mash the grains.

8.If desired, sprinkle toasted sesame seeds and shredded coconut over the rice and fold gently to combine.

9.Let the rice cool to room temperature before using it for sushi rolls or serving as a side dish.
