Peach and Fig Glazed Salmon

1.In a medium saucepan over medium heat, combine the diced peaches, quartered figs, honey, balsamic vinegar, and thyme. Cook for about 10 minutes, stirring occasionally, until the fruits are soft and the mixture has thickened slightly.

2.Remove the saucepan from heat and let the glaze cool for a few minutes. Use a blender or immersion blender to puree the mixture until smooth, then set aside.

3.Season the salmon fillets with salt and pepper on both sides.

4.In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down and sear for about 4-5 minutes until the skin is crispy.

5.Carefully flip the salmon fillets and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.

6.During the last minute of cooking, brush the peach and fig glaze generously over the salmon fillets, allowing it to caramelize slightly.

7.Remove the salmon from the skillet and serve immediately, drizzled with any remaining glaze.
