Festive Christmas Oildown with Caribbean Spices

1.In a large pot, soak the salt beef and pig tail in water for at least 2 hours, or overnight if possible, to reduce the saltiness. Drain and rinse before cooking.

2.In the same pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion becomes translucent, about 3-4 minutes.

3.Add the salt beef and pig tail to the pot, stirring to combine with the sautéed aromatics. Cook for about 5 minutes, allowing the meats to brown slightly.

4.Pour in the coconut milk and water, and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 30 minutes, skimming off any foam that rises to the surface.

5.After 30 minutes, add the chicken pieces, carrots, potatoes, thyme, allspice, black pepper, paprika, brown sugar, and the whole Scotch bonnet pepper (if using). Stir gently to combine all ingredients.

6.Cover the pot again and let it simmer for an additional 30-40 minutes, or until the meats are tender and the vegetables are cooked through. Stir occasionally to prevent sticking, and adjust the seasoning with salt if necessary.

7.Once cooked, remove the Scotch bonnet pepper and thyme sprigs. Taste and adjust seasoning if needed. Serve hot, garnished with chopped parsley or cilantro.
