Sweet and Spicy Peanut Citrus Glaze Wings

1.Pat chicken wings dry with paper towels and place them in a large bowl.

2.In a separate medium bowl, whisk together peanut butter, ketchup, honey, Dijon mustard, orange juice, lime juice, soy sauce, minced garlic, smoked paprika, cayenne pepper, black pepper, and kosher salt until smooth and fully combined.

3.Pour half of the marinade over the chicken wings, reserving the other half for glazing. Toss wings thoroughly to coat. Cover and refrigerate for at least 2 hours, preferably overnight, to marinate.

4.Preheat oven to 425°F (220°C). Line a large baking sheet with aluminum foil and set a wire rack on top. Brush the rack lightly with vegetable oil to prevent sticking.

5.Arrange the marinated wings in a single layer on the rack, shaking off excess marinade. Bake for 25 minutes.

6.While wings bake, pour the reserved marinade into a small saucepan. Bring to a simmer over medium heat, stirring frequently, and cook for 3-4 minutes until slightly thickened. Remove from heat and set aside.

7.After 25 minutes, remove wings from the oven and brush generously with the thickened glaze. Return to oven and bake an additional 10-12 minutes, or until wings are deeply caramelized and cooked through (internal temperature should reach 175°F/80°C).

8.Transfer wings to a serving platter. Drizzle with any remaining glaze, sprinkle with chopped peanuts and cilantro, and serve with lime wedges on the side.
