Chocolate Avocado Mousse

1.Place the chopped dark chocolate in a heatproof bowl and melt it gently over a pot of simmering water (double boiler method), stirring occasionally until smooth. Remove from heat and let cool slightly.

2.In a food processor or high-speed blender, combine the ripe avocados, melted dark chocolate, maple syrup (or honey), unsweetened cocoa powder, vanilla extract, and a pinch of salt.

3.Blend the mixture until completely smooth and creamy, scraping down the sides as needed to ensure even mixing.

4.Taste the mousse and adjust sweetness if desired by adding a little more maple syrup, blending again briefly.

5.Divide the mousse evenly into four serving glasses or bowls.

6.Cover and refrigerate for at least 1 hour to chill and set, allowing the flavors to meld and the texture to firm up slightly.

7.Before serving, garnish each mousse with your choice of fresh raspberries, shaved dark chocolate, a sprig of mint, or a small dollop of whipped cream for an elegant restaurant-style presentation.
