Lemon Basil Sorbet

1.In a small saucepan, combine the water and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved, creating a simple syrup. Remove from heat and let it cool to room temperature.

2.Once cooled, add the fresh lemon juice, lemon zest, fresh basil leaves, and a pinch of salt to the simple syrup. Stir well to combine.

3.Pour the mixture into a blender and blend on high speed for about 1 minute until the basil leaves are finely incorporated and the mixture is smooth and vibrant green.

4.Strain the blended mixture through a fine-mesh sieve into a bowl to remove basil leaf solids and lemon zest, pressing gently to extract maximum flavor.

5.Cover the strained mixture and refrigerate for at least 2 hours or until thoroughly chilled.

6.Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes, until it reaches a soft-serve consistency.

7.Transfer the sorbet to an airtight container and freeze for an additional 2 hours to firm up before serving.

8.To serve, scoop the sorbet into chilled bowls or glasses. Garnish with a small fresh basil leaf and a thin lemon twist for an elegant presentation.
