Spicy Cajun Sausage and Egg Breakfast Tacos

1.In a medium bowl, whisk together the eggs, milk, black pepper, and a pinch of salt until well combined and slightly frothy.

2.Heat the butter or oil in a large non-stick skillet over medium heat. Add the sliced sausage and cook for 4 to 6 minutes, turning occasionally, until the edges are slightly browned and crispy.

3.Sprinkle the Cajun seasoning over the sausage and stir to coat evenly. Cook for 1 minute more until fragrant.

4.Pour the egg mixture over the seasoned sausage in the skillet. Let the eggs set slightly around the edges (about 30 seconds).

5.Using a spatula, gently push the cooked edges toward the center, tilting the pan so the uncooked egg flows underneath. Continue this process until the eggs are mostly set but still slightly moist. Do not overcook.
