Microwave Fresh Tomato & Basil Sauce

1.Place the diced tomatoes, minced garlic, olive oil, salt, pepper, and chili flakes into a large microwave-safe glass bowl.

2.Stir the mixture well to ensure the tomatoes are evenly coated in the oil and seasoning.

3.Cover the bowl with a microwave-safe lid or vented plastic wrap to prevent splattering while allowing steam to escape.

4.Microwave on high power for 5 minutes. Carefully remove the bowl and stir the tomatoes, lightly mashing some with a fork to release their juices.

5.Return the bowl to the microwave and cook for another 3 to 5 minutes, or until the tomatoes have completely broken down and the sauce has slightly thickened.

6.Remove from the microwave and stir in the balsamic vinegar and the prepared pesto if using.

7.Let the sauce sit for 2 minutes to cool slightly, then fold in the fresh basil leaves to preserve their vibrant green color and aroma.

8.Serve immediately over hot pasta or spoon onto toasted baguette slices for a fresh bruschetta.
