Roasted Chicken with Onions and Carrots

1.Preheat the oven to 400°F (200°C).

2.In a small bowl, mix together the olive oil, minced garlic, dried thyme, dried rosemary, salt, and black pepper to make the marinade.

3.Pat the chicken dry with paper towels and place it in a large roasting pan.

4.Rub the chicken all over with the marinade, making sure to get it under the skin as well.

5.Arrange the sliced onions and carrot chunks around the chicken in the roasting pan.

6.Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C) and the skin is crispy and golden brown.

7.Remove the chicken from the oven and let it rest for 10-15 minutes before carving.

8.Serve the roasted chicken with the caramelized onions and roasted carrots.
