Easy Chicken and Dumplings

1.In a large pot, bring the chicken broth to a simmer. Add the chicken breasts, carrots, celery, salt, and pepper. Cover and cook for 20 minutes over medium heat, or until the chicken is cooked through.

2.Remove the chicken breasts from the pot and shred them using two forks before returning them to the pot. Stir to combine everything well.

3.In a large bowl, mix the all-purpose flour and salt for the dumplings. Gradually add water, stirring until a stiff dough forms.

4.On a floured surface, knead the dough briefly, then roll it out to about 1/2-inch thickness. Cut the dough into 1-inch squares or strips.

5.Bring the chicken stew back to a simmer and drop the dough pieces into the pot one at a time, stirring gently. Ensure the dumplings don't stick together.

6.Cover and simmer for 15-20 minutes or until the dumplings are cooked through and the stew has thickened slightly.

7.Serve hot, garnishing with fresh parsley if desired.
