Spicy Amla Pickle

Preparing the Amla Wash and pat dry the Indian gooseberries. Cut them into halves or slices, discarding any seeds or tough parts. Set aside.

Preparing the Pickling Masala In a dry pan, lightly roast fenugreek seeds, fennel seeds, cumin seeds, and mustard seeds until fragrant. Allow them to cool, then grind into a coarse powder.

Pickling Preparation Heat mustard oil in a pan until it reaches smoking point. Allow it to cool slightly. Add asafoetida, turmeric powder, and the ground spice mixture. Stir well.

4.Add the amla pieces to the pan along with vinegar, jaggery (if using), and salt. Mix everything thoroughly, ensuring the amla is well coated with the spices.

5.Cook the mixture on low heat for 5-7 minutes, stirring occasionally. Turn off the heat and let it cool completely.

Pickling Process Transfer the cooled pickle into a sterilized glass jar. Ensure the pickle is fully submerged in oil. Add curry leaves on top for extra flavor.

Maturing the Pickle Store the jar in a cool, dark place for at least a week to allow the flavors to meld. Shake the jar occasionally to mix the spices. The pickle will be ready to consume after a week.
