Acne-Safe Delight

1.Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent. Add the minced garlic and cook for another minute.

2.Add the diced red bell pepper and zucchini to the skillet. Cook until they start to soften.

3.Rinse the quinoa under cold water. In a separate saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat, cover, and simmer for about 15 minutes or until the quinoa is cooked through.

4.Once the vegetables are tender, add the cherry tomatoes, paprika, cumin, salt, and pepper to the skillet. Stir well to combine.

5.Fluff the cooked quinoa with a fork and add it to the vegetable mixture. Mix everything together and let it simmer for a few more minutes.

6.Serve the Acne-Safe Delight in bowls, garnished with fresh parsley.
