Homemade Vanilla Extract

1.Split each vanilla bean in half lengthwise using a sharp knife, leaving about an inch at the end connected.

2.Gently scrape out the vanilla seeds from the beans using the knife. Place both the seeds and the bean pods into a clean glass jar or bottle.

3.Pour the cup of vodka over the vanilla beans, ensuring they are completely submerged.

4.Seal the jar or bottle tightly with a lid. Shake it well to mix the vanilla seeds and vodka.

5.Store the jar in a cool, dark place for at least 8 weeks, shaking it gently once a week to help distribute the vanilla seeds. The extract will become darker and more fragrant over time.

6.After 8 weeks, you can begin using the vanilla extract. For a more potent flavor, continue to let it mature. You can also strain out the vanilla pods and seeds if preferred, but leaving them in will continue to deepen the flavor over time.
