Spicy Bottle Gourd Curry with Dry Prawns

1.Peel and chop the bottle gourd into small pieces. Rinse the dry prawns in water, drain, and keep aside.

2.Finely chop the green chillies and onion.

3.In a pan, heat some oil over medium heat. Add the chopped onions and green chillies. Saute until the onions are translucent.

4.Add the dry prawns and stir-fry until they turn crispy and golden brown.

5.Now, add the chopped bottle gourd to the pan. Cook for a few minutes until they start to soften.

6.In a separate bowl, beat the egg with milk, red chilli powder, and salt.

7.Pour this egg mixture over the cooking bottle gourd and prawns. Stir well to combine all ingredients.

8.Cover the pan and let it simmer on low heat for about 10-15 minutes or until the bottle gourd is cooked through and the curry thickens.

9.Adjust salt and red chilli powder according to your taste preference.

10.Serve hot with steamed rice or bread of your choice.
