Crispy Egg Rolls

1.In a bowl, beat the eggs until well combined.

2.Add the chopped bell peppers, onions, mushrooms, and shredded cheese to the beaten eggs.

3.Mix everything together until evenly distributed.

4.Place a spring roll wrapper on a flat surface.

5.Spoon some of the egg mixture onto the wrapper, spreading it out in a line.

6.Roll the wrapper tightly, folding in the sides as you go.

7.Seal the edge of the wrapper with a bit of water to secure the roll.

8.Heat oil in a deep pan for frying.

9.Carefully place the egg rolls in the hot oil and fry until golden brown and crispy, turning occasionally for even cooking.

10.Remove the egg rolls from the oil and place them on a paper towel to drain excess oil.

11.Serve the crispy egg rolls hot with your favorite dipping sauce.
