Christmas Masala Delight

1.Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.

2.In a large pot, heat ghee over medium heat. Add cumin seeds, cinnamon stick, cardamom pods, and sauté until fragrant.

3.Add chopped onions, garlic, and ginger. Cook until onions are translucent and fragrant.

4.Stir in the mixed vegetables, cashew nuts, and raisins. Cook for a few minutes until vegetables are slightly tender.

5.Add turmeric powder, garam masala, red chili powder, and salt. Mix well to coat the vegetables evenly.

6.Pour in the rinsed basmati rice and stir to combine with the vegetable mixture.

7.Add water and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.

8.Once cooked, fluff the rice with a fork and remove from heat. Let it sit covered for 5 minutes to steam.
