Festive Spiced Christmas Chickpeas

1.Preheat your oven to 400°F (200°C).

2.In a large mixing bowl, combine the drained chickpeas, olive oil, cumin, coriander, smoked paprika, cinnamon, nutmeg, cayenne pepper, salt, and pepper. Toss until the chickpeas are well coated with the spices.

3.Spread the seasoned chickpeas evenly on a baking sheet lined with parchment paper.

4.Roast in the preheated oven for 25-30 minutes, or until the chickpeas are golden brown and crispy, stirring halfway through to ensure even cooking.

5.Once roasted, remove the chickpeas from the oven and let them cool slightly.

6.In a large serving bowl, combine the roasted chickpeas, dried cranberries, chopped pecans, and fresh parsley.

7.Drizzle with lemon juice and toss gently to combine all the ingredients.

8.Serve warm or at room temperature as a festive holiday snack or appetizer.
