Heavenly Basil Tomato Soup with Creamy Bliss

1.In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

2.Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

3.Add the diced tomatoes (with their juices), vegetable broth, sugar, dried basil, dried oregano, and red pepper flakes to the pot. Stir well to combine.

4.Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, allowing the flavors to meld together.

5.Using an immersion blender, carefully blend the soup until smooth. If you don't have an immersion blender, you can transfer the soup in batches to a countertop blender.

6.Once blended, return the soup to the pot and stir in the heavy cream. Heat the soup over low heat until warmed through, about 5 minutes. Do not let it boil.

7.Season with salt and pepper to taste.

8.Serve hot, garnished with fresh basil leaves.
