Monday Diner Delight: A Hearty Comfort Meal

1.In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.

2.Add the ground beef to the pot, breaking it up with a spoon. Cook until browned, about 7-10 minutes. Drain excess fat if necessary.

3.Stir in the chili powder, cumin, paprika, salt, and pepper, cooking for another minute to toast the spices.

4.Add the kidney beans, black beans, diced tomatoes, corn, and beef broth to the pot. Stir well to combine all ingredients.
