Creamy Garlic Herb Chicken Pasta

1.Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

2.In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

3.Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.

4.Season the chicken breasts with salt and pepper. Push the onion and garlic mixture to the side of the skillet and add the chicken breasts. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

5.In the same skillet, add the cooking cream and mixed herbs. Stir well to combine, scraping up any browned bits from the bottom of the pan. Bring the mixture to a gentle simmer.

6.Add the cooked pasta to the skillet, tossing to coat it in the creamy sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.

7.Add the sliced chicken back into the skillet, mixing everything together. Cook for an additional 2-3 minutes to heat through.

8.Serve the creamy garlic herb chicken pasta hot, garnished with additional herbs if desired.
